Fish in the spotlight : Oreo dory+ John dory
The John Dory can be found in the eastern part of the Atlantic, from the south of Norway to South Africa. It is considered to bea noble fish species such as sole, turbot, brill and seabass.
It’s a beautiful white fillet that doesn’t fall apart easily and can be cooked in all kinds of ways. The round ‘thumb’ print on the side of the fish is typical.
The oreo dory can only be found in the southern hemisphere. He lives on great depth between 600 and 1200 m which explains his striking appearance and his remarkable eyes. The oreo dory grows very slowly and can live up to 80 years.
The John Dory and Oreo Dory share the same culinary qualities, but they are 2 totally different species. The population of both species are not in danger.
